Sweet potato wedges with paprika

Crunch … these are healthy and taste amazing!

Sweet potatoes are not only more attractive and better tasting than their white, rounder cousins but they are also PACKED full of goodness. They contain vitamins D, B6 and C. They are a source of iron — which is perfect for growing little bodies — and they are a good source of magnesium which is a proven anti-stress mineral.

Ingredients

  • 700g golden sweet potato
  • 1/2 teaspoon paprika
  • Drizzle of extra-virgin olive oil

Method

  1. Pre-heat fan-forced oven to 180C and line a baking tray with grease-proof paper.
  2. Peel and chop sweet potato into large wedge-shaped chunks that are big enough for your child to hold onto but not too small that they will shrivel when baked.
  3. Place wedges onto pre-prepared tray as shown below and drizzle with olive oil (I use only a very small amount but you can use whatever you feel is appropriate. You could also use spray oil if you preferred too).

4. Sprinkle over paprika and then use your hands to coat the wedges in the oil and paprika.
5. Bake in oven for 30 minutes or until crunchy on the outside but soft on the inside.

Handy tips

* If you have a bunch of leftovers you can wrap them in glad wrap and place in a snap lock back in the freezer.
* These are great for lunch, dinner or anytime during the day for a snack.
