Mango morning muffins

Mango morning muffins

Munch munch … these mango morning muffins are so fluffy and tasty, you’ll want to eat them for breakfast every day.

I was lucky enough to be chosen to join in on the #instaweanteam challenge on Instagram this week. Every week a group of great bloggers choose an ingredient and come up with a recipe each on that specific ingredient.

This week was MANGO week. Which was perfect because I absolutely adore mangos.

Healthy Anzac biscuits

Healthy Anzac biscuits

We will remember them … these biscuits are made in memory of those who have fought for us.

Lest we forget.

Today is Anzac Day in Australia. A day that we remember Australians who served and died in all wars.

The 25th of April also marks the day in which the first major military action was fought by Australian and New Zealand forces during WWI and the landing of Australian and New Zealand soldiers at Gallipoli in Turkey.

This year marks the 100th year anniversary of that landing in 1915.

Banana coconut sushi

Banana coconut sushi

Fruity … this banana coconut sushi might sound strange but it’s super delicious

I know it might seem like a weird combination but this sushi is a real hit in our household. It’s a great lunchtime or snack option.

Sushi is a perfect first finger food and an easy way to fill little tummies. This version is made without seaweed and you can add other fruit (or savoury) combinations to suit your tastes.

Sushi also isn’t that hard to make, so don’t be scared off! It can be made and on the table within 30 minutes and that includes the cooking of the rice.

Berry nice porridge

Berry good … this porridge is so simple to whip up and tastes great.

This berry nice porridge (sorry, just had to use that pun) is so quick and simple to whip up and makes for the perfect healthy weekday breakfast.

It’s one of my go-to staples for Molly, because she loves porridge for breakfast and can be on the table in under five-minutes.

Healthy sugar free fairy bread

Healthy sugar free fairy bread

Party time … who says sugar free party food has to be boring?

We had Molly’s birthday party on the weekend!! I still can’t believe she’s one!

I love big parties and the buzz of friends and family enjoying good food and cheer. We had a big bunch of people over to our place for a BBQ to celebrate.

One of my creations for the party was this healthy sugar free fairy bread. It’s so simple to make and also is a great snack for morning or afternoon tea anytime of the year (who needs a party as an excuse!).
