Healthy Anzac biscuits

We will remember them … these biscuits are made in memory of those who have fought for us.

Lest we forget.

Today is Anzac Day in Australia. A day that we remember Australians who served and died in all wars.

The 25th of April also marks the day in which the first major military action was fought by Australian and New Zealand forces during WWI and the landing of Australian and New Zealand soldiers at Gallipoli in Turkey.

This year marks the 100th year anniversary of that landing in 1915.

Berry good … this porridge is so simple to whip up and tastes great.

I’m sure I’ve said it before but breakfast really is my favourite meal of the day. Often I’m thinking about what I’ll have for breakfast the next morning at night before I go to bed.

This berry nice porridge (sorry, just had to use that pun) is so quick and simple to whip up and makes for the perfect healthy weekday breakfast.

It’s one of my go-to staples for Molly, because she loves porridge for breakfast and can be on the table in under five-minutes.

Five-minute bircher muesli

Delish … this bircher muesli is the perfect way to start the day.

Breakfast is probably my favourite meal of the day. I’ve often eaten cereal or scrambled eggs for dinner out of complete choice and utter love of breakfast food.

I’m already thinking about breakfast tomorrow morning and what delicious creation I can devour.

Normally bircher muesli is an overnight thing. Which means preparation. Which, let’s be honest isn’t always completely practical. But take a deep sigh of relief because this bircher is still creamy and delicious and takes just five minutes to make.

egg-free, sugar-free muesli slice

Afternoon delight … I dare you to try and stop at one piece.

It seems like this week is all about slices for me! But really who doesn’t love a good slice.

Although I have to confess, this egg-free, sugar-free muesli slice is only partly my recipe. The initial inspiration for this came from one of my friends who I’ve known since high school. She has an eight-week-old baby girl and goodness knows how she had the time to come up with a slice recipe while juggling a newborn, but she did and it was pretty darn amazing.

I just made a few slight changes and additions and she’s given me permission to share it with everyone here.
