Lest we forget.
Today is Anzac Day in Australia. A day that we remember Australians who served and died in all wars.
The 25th of April also marks the day in which the first major military action was fought by Australian and New Zealand forces during WWI and the landing of Australian and New Zealand soldiers at Gallipoli in Turkey.
This year marks the 100th year anniversary of that landing in 1915.
It seems like this week is all about slices for me! But really who doesn’t love a good slice.
Although I have to confess, this egg-free, sugar-free muesli slice is only partly my recipe. The initial inspiration for this came from one of my friends who I’ve known since high school. She has an eight-week-old baby girl and goodness knows how she had the time to come up with a slice recipe while juggling a newborn, but she did and it was pretty darn amazing.
I just made a few slight changes and additions and she’s given me permission to share it with everyone here.
I love baking. It’s probably one of my favourite things to do in the kitchen. I’m the cake maker in our family and whenever we have a big birthday or celebration I’m always the go-to person to bake for the occasion.
With Molly’s first birthday (and mine – we’re born on the same day) just around the corner (AHHH can it really be that soon?!?!?) I wanted to come up with a cake option that wasn’t loaded with sugar but that still tasted great. I’ve been testing out my recipes at Molly’s childcare and given it’s an egg and nut free centre I wanted to make a cupcake that had no eggs in it so I could try it out with the kids there. I also wanted to create something that almost any child could eat, regardless of allergies.
